The white Chave 2000 is a big wine. Needs time in the glass, or should be decanted. At first the alcohol is dominant, but after some time the wine gets focused both in the bouquet and on the palate. It’s a quite fat and opulent dry white, but still it has quite a good acidity and balance, and could be very interesting with the right food. Will keep for at least 10 years more. Impressive.
