The Blanc de Blanc 1982 from Billecart Salmon is a perfectly matured champagne, very nice complexity, good length and body. Rarely does one get a fully mature champagne, that has kept this level of freshness and balance. It’s not a very big and heavy champagne, and not the greatest of terroir, but it’s very elegant and refined – the trademark of Billecart Salmon.
