After working with two or three different cellars for the past several years, Domaine Amiot-Servelle has settled down in their new cuverie in the outskirts of Chambolle.
The wines are getting evermore precise, and there is scope for further improvement with the new facility, with winemaking by gravity instead of moving the wines between different cellars in Chambolle, as was done previously.
Since 2022, there is one winery and one cellar, and this makes production much more efficient, and the wines, (hopefully) better and more precise.
The new winery
Amiot-Servelle has just finished the construction of their new winery in Chambolle-Musigny, located on the road to Morey-Saint-Denis. The architect behind the design is Marine Leflaive from Nuits-Saint-Georges, who has created beautiful cellars for Domaine Leflaive, Domaine Dujac, and Domaine Rousseau amongst others.
The Amiot-Servelle estate in short
Clément Tachot began vinification in the 1920s at the estate in Chambolle Musigny.
Cécile (Clément’s daughter) and Jean Servelle (son-in-law) took over the estate in the 1950s and created Domaine Servelle-Tachot.
In 1980, Jean’s sister, Elizabeth Servelle, and her husband, Christian Amiot, entered the picture. Christian’s father had his own estate in Morey-Saint-Denis.
In 1989, Christian and Elizabeth took over the estate that continues today as Amiot-Servelle.
Christian and Elizabeth Amiot-Servelle have three children, two of whom are involved in the domaine: Prune and Antoine Amiot-Servelle. The brother and sister work together, and they will eventually take over from their parents.

Domaine Amiot-Servelle Bourgogne Côte d’Or 2023
This is fully de-stemmed in 2023 and is quite substantial for this level. Has good concentration and length for a Bourgogne rouge. A vin de soif with a pleasant lively character.

Domaine Amiot-Servelle Morey-Saint-Denis 2023
From old vines in the bottom part of Morey-Saint-Denis, 40% whole clusters and 10-20% new oak. An energetic wine … lively, with quite charming tension. 2023 is offering a nice vivid structure … a good start for the lineup.

Domaine Amiot-Servelle Chambolle-Musigny 2023
Very vivid and lively with a pronounced framboise note. The grapes come from 8 different plots – 25% new oak. Very fine tension that suits the Amiot-Servelle wines very well. As (almost) always, the Chambolle takes laurels in direct comparison with the Morey village.

Domaine Amiot-Servelle Chambolle-Musigny Les Bas Doix 2023
Bas Doix is below Hauts Doix, just above the village of Vougeot. This is rich and vivid … intense, sweeter fruit than most Chambolles. Has some of the qualities of Hauts Doix … airy and enjoyable … vin d’émotion. 2023 suits a terroir like this very well.
(Drink from 2030) – Very Good – (90p) –
Domaine Amiot-Servelle Chambolle-Musigny Feusselottes 2023
With 100% whole clusters and 30% new oak. Very rich, lively and delicate in 2023. The wine is vivid with the special combination of dark and red fruit often found in Feusselottes. Delightful mid-palate tension gives a vin d’émotion feeling in this juicy sucker.
(Drink from 2032) – Fine – (92p) –
Domaine Amiot-Servelle Chambolle-Musigny Les Plantes 2023
This is an interesting wine, presumably made from 40-year-old pinot droit vines. Deeper, with more body and soul than the Doix … lovely energy .. damn, this is interesting. Not super precise, but it is still very vivid, with fine mid-palate fruit. Vin d’émotion bien sûr.

Domaine Amiot-Servelle Chambolle-Musigny Les Fuées 2023
Les Fuées is one of my favourite Chambolle vineyards; it often has a lovely hedonistic feel. The 2023 Fuées is richer and more intense. Wow … very delicate and hedonistic. 30-40% whole clusters, silky concentration – this is quite sexy.
