Burgundies often need ageing to unfold and shine, a fact, yet, many lovers of Burgundian wine don’t have the time or facilities to store and age the precious bottles for 10, 20 or even 30 years to reach a mature stage.

Most Burgundies are tasted and consumed when they are too young, 5 years or younger which creates problems when the wine needs 15 to 25 years to reach a fine mature stage.
As a consequence, there is a need for Burgundies that can be enjoyed earlier without sacrificing too much of the lovely maturing notes that come with properly ageing Burgundies.
Many producers have slowly started to adapt the wines for earlier consumption, and while this is possible in theory, it’s rarely without cost of complexity. It is simply very difficult to speed age a Burgundy and get the same optimal result.
A female compromise
The ultimate goal of enjoying and drinking wine is joyful hedonistic emotions – plain and simple – getting a wine that gives a positive emotional impression of complexity and balance. Not a tannic or acidic wine 10 years from anything emotional.
Men like to optimise without compromise, but we drink the wines too young. Wines are being consumed before their optimal maturity.
The female way of thinking is more honed in on logic and a wish to achieve the possible. Let’s face it, the female tasters are often sharper and more focused on the wine in the glass without all the fuzz surrounding the wines.
So, the compromise is making wines that are accessible younger, and faster reaching a ready-to-give state where harmony and enjoyment is gracing your palate.
We give you Céline
Céline Groffier is the wife of Nicolas Groffier and the mother of their two kids, and is from a vigneron family in Meursault.
She is also a wine geek, but she sees the world differently and with the goal of giving the consumer the best wines possible.
This has been the driving force behind Domaine DeCéline. Wines are enjoyable, young, and ready to give emotional pleasure.

The first vintage
The first vintage of DeCéline was in 2024, an OK vintage (not a catastrophic harvest as in other estates), with a good supply of grapes from the Groffier estate.
DeCéline Bourgogne Côte d’Or – Le Champ des Loups 2024 : the first breath, free and luminous momentum.
A very nice wine from below the road that in 2024, yielded a surprisingly lovely fruit. Very well done in this vintage.

DeCéline Chambolle-Musigny Premier Cru – Les Croix 2024: the delicacy of a historic climat, shaped by stone and time.
Lower slope just in the area below Bonnes Mares. Very rich and elegant unfolding beautifully … ready to rock, almost … would love to have this in my fridge or cellar – the essence of drinkability.

DeCéline Chambolle-Musigny Premier Cru – Les Lieux-Dits 2024: the living harmony of Burgundy’s mosaic.
Now, we reach the more serious and flashy wines – Hauts-Doix – these are from younger wines around 40 years growing next to the older wines of this Lieu-dits. A very lively and expressive wine … more forward than the normal Groffier wine … very sexy even in 2024.

DeCéline Chambolle-Musigny Premier Cru – Les Amoureuses 2024: Ma Parcelle.
The Chambolle Amoureuses is from the core middle part of the big Groffier plot. Hence, mostly from the clay part. The style has been lightened somewhat, giving it a light-footed drinkability … sexy … hell yes.

DeCéline Bonnes-Mares Grand Cru – La Souveraine 2024: the majesty of a timeless terroir, noble. and sovereign power.
The big and intense Bonnes Mares, from the middle part of the slope. Mainly red soil … quite lightfooted – served it to a vigneron friend – who makes accessible wines – and she loved it off the bat. Expensive treat … but girls want to have fun!
