Wine should be about love and passion … don’t waste your liver on boring, poor, or even defunct and overripe wines .
This is not about justice to the last millimeter… fine-tune your own limits and borders… but think energy and tension … in a world with global warming, this is essential.
It should always be in the search of enjoyment, pleasure and excellence … the wine should thrill you, enchant you and seduce you beyond your senses. An overripe wine … with overripe phenolics does not offer these thrills
A wine should, at a minimum, be frais and Léger … i.e., have energy and a good level of tension and liveliness. If not … forget it; it is often harvested either too early or too late, or the vinification is just a general mess … so ALWAYS frais and léger.
Listen to my friend May-lin – Frais et Léger …
The steps of vin d’émotion
– A true vin d’émotion – a Burgundy of passion
– A truly hedonistic wine – lively and enjoyable
– A vivacious wine for pure indulgence
– A potential vin d’émotion – frais et léger
Quaffable – for the buzz
Tedious – avoid
Annoying – avoid
Awfull
Leaving the tedious, annoying, and awful wines behind is – trust me – a big thing, realizing that a large part of the white wines produced today are overripe chardonnay soup, that are so, so far from fresh and vibrant that it does make one wonder. Is it 30% of the white Macons in the worst vintages? 40%? I don’t know, but something is rotten in the southern appellations.
And going to Côte de Beaune – it does help … but still, quite a lot of wines do not qualify as suitable for drinking – get Chateldon instead of these overripe phenolics.
I will rate them accordingly… tedious, annoying, and awful… with no further comments!
