Pet’nat’ Chapuis & Chapuis Pétillant Naturel 24

I have been enjoying Pet’Nat´s through the years, and while some of them are quite good, I have not done reviews of very many so far.

This week I tasted a very nice example from Romain et Jean-Guillaume Chapuis who runs Chapuis & Chapuis in Pommard.

I have tasted quite some wines from Chapuis & Chapuis, as they offer good wines that suit the restaurant business.

The wines are well made … a bit to the hippie/hipster side … quite low sulphur and with a nice balance and purity. The Pet´Nat´ – Pétillant Naturel 24 – is a blend of Aligote and Chardonnay (more Chardonnay than usual) made in a classic Pet´nat´ way … see below.

PET`NAT` – [Google AI]

Pet-nat, short for pétillant naturel (French for “naturally sparkling”), is a ⁠natural sparkling wine made using an ancient single-fermentation technique called the méthode ancestrale. 

How It Is Made

• Single fermentation: Unlike Champagne, which goes through a second added fermentation, pet-nat is bottled while the first fermentation is still happening. 
• Trapped bubbles: The carbon dioxide created by natural yeasts eating sugar gets trapped inside the sealed bottle, making the fizzy bubbles. 
• No additives: Winemakers usually do not add extra sugars or yeasts at bottling time. 

Key Characteristics

• Cloudy look: Many bottles are unfined and unfiltered, leaving a light yeast sediment at the bottom.
• Gentle fizz: The bubbles are often softer and less intense than standard Champagne or Prosecco.
• Fresh flavors: They taste fruity, crisp, and sometimes slightly yeasty, and are best drunk young.
