It’s always a great pleasure to visit Domaine Hubert Lamy – where the dynamic Olivier Lamy always is working hard on improving the wines.

One of the improvements made over the last 10 years is the extension of the elevage, from intially 12 months in 2006 to now 24 month – a very interesting process to be honest.
Extension of the elevage
When tasting the Hubert Lamy wines its important to remember the extended elevage used these days at the estate – 24 months in total since the vintage 2014.
Olivier made quite a lot of experiments and was gradually increasing the elevage time. In 2006 the elevage was was still 12 month – in 2007 it was increased to 15 month and in 2008 increased further to 18 month.
In the years 2009, 2010,11,12,13 a part was 18 month while the rest was made with 24 month elevage, and with these experiences Olivier decided to extend the elevage to 24 month for all wines from 2014.
I have tasted some of the experiments made with the different length of the elevage, and was very impressed by the effect of the longer elevage – as the wines seem to become more defined and focused with the longer elevage.
The longer elevage also seem to create wines with greater detail and complexity – wines that are more precise when young at least. I would however also say that the long elevage wines take a bit longer to unfold, although I need to taste more to be sure.
The 2017s here are lovely – pure, vivacious and detailed – with a lovely airy lightness. It should be notet that the wines still have some elevage left – so would expect to see the gain even more focus before bottling.
Tasting notes from February 14th 2019
Lets get to the tasting notes ,,
Starting out with the Bourgogne Blanc “Les Chataigners” 2017 – is a lovely wine – with a fine vivid mid-palate fruit for this level. The charming fruit is brought forward by a nice acidity – balanced and enjoyable – Good (85 – 86p).
Moving up to Saint-Aubin “La Princée” – more focus with a lovely freshness and minerality. The bouquet offer delicate fruit – white orchard fruits supported by the fine minerality. Really like the balance in this wine – lovely freshness and a very charming mid-palate fruit – showing the best sides of the 2017 vintage. Good (85 – 87p).
