The 2004 Chablis Beauroy from Philippe Pacalet is keeping very well indeed. The nose is still fresh and crisp, and after some time in the glas it offers the most lovely chalky minerality – seashells – combined with a cool and pure white fruit. On the palate precise – with a razor sharp defining acidity. This is classic hardcore Chablis with a vibrant acidity .. really enjoyed this. Will keep .. but why not drink now.
